Pressure Cooker Cajun Chicken Sausage and Rice

"This flavorful quick and easy weeknight meal uses healthy chicken sausage, flavorful rice and cajun spices, and it takes less than 30 minutes to make from start to finish."

Ingredients

1 package al fresco Roasted Pepper & Asiago Chicken Sausage, sliced into 1/4 inch slices

2 tablespoons olive oil

1 onion, diced

1 teaspoon minced garlic

1 bell pepper, diced

1 1/2 tablespoons tomato paste

1 1/2 cups uncooked jasmine rice

1 tablespoon cajun seasoning

2 cups chicken broth

Directions:

  • 1Add olive oil and diced onion to the pressure cooker. Put on the sauté feature, and when you hear it gently sizzling, stir often until onions are translucent (2-3 minutes).
  • 2To Make Now:
  • 3Stir in diced bell pepper, tomato paste, rice, cajon seasoning, and chicken broth. Place lid on and seal. Cook on High pressure for 10 minutes, then do instant release to release the steam. Stir gently and serve immediately.
  • 4To Make It a Freezer Meal:
  • 5Transfer cooked sausage and onion to a medium bowl to cool. Add diced bell pepper, tomato paste, rice, cajon seasoning, and chicken broth to a freezer friendly container, then add cooled sausage mixture. Seal and freeze.
  • 6To Cook from Frozen:
  • 7Add frozen mixer to pressure cooker. Place on sauté feature and sauté until you have approximately 1/4 cup of liquids in the bottom. Place lid on and seal. Cook on High pressure for 10 minutes, then do instant release to release the steam. Stir gently and serve immediately.
