12 oz al fresco Roasted Pepper & Asiago Fully Cooked Chicken Sausage

1 1/2 cup Whole wheat macaroni, uncooked (should make about 3 cups cooked)

1 lb Broccoli Rabe

1 1/2 Tbs Extra virgin olive oil

2 cloves Garlic, finely chopped

1/8 tsp Chili pepper flakes

3/4 Canned Cannellini beans, drained and rinsed

1/8 cup Yellow sun-dried tomato halves

1 cup Chicken broth, low-fat, unsalted

Instructions
  • Preheat oven to 375 degrees.
  • Spray a baking sheet and roast al fresco Roasted Pepper and Asiago sausage links, covered with foil for 10 - 12 minutes, turn over 1/2 way. Remove from oven, set aside and keep warm.
  •  Cook the pasta in a medium pot of boiling water according to package, drain when cooked, keep warm.
  • Bring a large pot of water to a boil. Place broccoli rabe in the boiling water and cook for 4 minutes. Remove, drain, place the broccoli rabe in cold running water for 3 minutes. Drain water and squeeze the broccoli rabe dry.
  • Heat a large skillet over medium high heat, add olive oil and garlic, slightly browning the garlic before adding the broccoli rabe. Cook for 2 minutes, season with red pepper flakes, add beans and dried tomatoes, and cooked pasta, toss well.
  • Add chicken broth and sausage (you may leave links whole, or slice 1/4" thick on the diagonal). Cover and simmer 2 minutes.
    Serving Suggestions - Sprinkle with parmesan cheese and serve with crispy Italian bread.
