1 12oz pkg Spicy Jalapeno Chicken Sausages sliced into small pieces

2 cans Diced tomatoes in puree (28 ounces)

1/4 cup Cayenne Pepper sauce (Frank’s Red Hot)

1/2 Cucumber, seedless, cut into chunks

1 small Red Onion, cut into chunks

2 Jalapeños, seeded, coarsely chopped

2 stalks Celery, chunked

Handful Fresh cilantro leaves

1 Lemon or Lime, juice, squeezed

Salt and Pepper, to taste

garnish Wedges of lime or lemon

Instructions
  • Saute chicken sausage in a pan over medium high heat using cooking spray until they are browned on both sides, about 2 minutes.
  • Remove and slice into bite sized pieces
  • Set aside
  • Combine all other ingredients in a food processor and pulse-grind into a thick soup
  • Adjust seasonings, if necessary
  • Pour soup into a thermos and chill until ready to serve
  • Add chicken sausage pieces and serve in chilled glasses with wedges of lime or lemon garnish.
  • Makes 2 1/2 quarts (10 cups).
    Suggested accompaniments: Green & black olives, gourmet potato chips in rosemary or black pepper flavors.
