  • Cook pasta according to the al dente directions on the box.
  • Heat the olive oil over a medium heat in a large saute pan.
  • Add the garlic to the oil and cook to a medium golden color.
  • Add minced jalepeno and cook for about one minute.
  • Add al fresco cooked chicken sausage to the sauce and stir for 1-2 minutes.
  • Drain cooked pasta and add to pan, tossing in the olive oil mixture well.
  • Tear and add spinach leaves and cook until slightly wilted.
  • Add tomatoes and cook for 30 seconds.
  • Add salt to taste.
  • Top plated pasta with 1/8 cup feta cheese. To prepare the Orange Sriracha Salad:
  • In a serving bowl, add carrot slices, parsley, feta, orange juice, lemon juice, olive oil, and Sriracha. Mix well and serve with cooked pasta.

1 (12 ounce) package al fresco Roasted Pepper and Asiago Chicken Sausage, sliced

1 pound penne pasta

1/4 cup olive oil, extra virgin

8 cloves fresh garlic, cut in half

2 slices fresh jalapeno pepper, minced

1 cup fresh spinach

1 cup cherry or grape tomatoes, sliced in half

2 tablespoons feta cheese crumbles

1/4 teaspoon black pepper, freshly ground

Orange Sriracha Carrot Salad:

4 carrots (heirloom purple, yellow, and orange carrots make for an extra pretty salad, but any will work), peeled and sliced into thin rounds

2/3 cup parsley, finely chopped

1 cup feta cheese crumbles

1/2 cup fresh squeezed orange juice

1/4 cup fresh squeezed lemon juice

1/4 cup olive oil

1 teaspoon Sriracha hot sauce
