Primavera Bow Tie Toss with Spinach and Feta Chicken Sausage

1 12oz package al fresco Spinach & Feta Chicken Sausage, sliced on bias 1/4" thick

8 oz Bow tie pasta, uncooked

2 cloved Garlic, minced

1 Red onion, small, julienned

1 Summer squash, small, bias cut

1 cup Zucchini, w/skin, fresh, slices(bias slices)

1/2 Green bell pepper, julienned

1/2 Red bell pepper, julienned

1 Tbs Fresh parsley, chopped

1 Tbs Fresh basil, chopped

1 Tbs Fresh rosemary, chopped

1 1/2 cup Broccoli florets, blanched in boiling water for 2 minutes then cooled immediately with cold water

2 Tbs Extra virgin olive oil

1 1/2 cup Light Alfredo sauce

1/4cup Grated low-sodium parmesan cheese

1/4 tsp Ground white pepper

Instructions
  • Cook the bow tie pasta according to package directions. Drain and cool immediately with cold water, reserve
  • Prepare the vegetables and fresh herbs as listed in the recipe ingredients.
  • Spray a large skillet (12") with pan spray and heat over high heat. Add the olive oil, saute the garlic and onion for 2 minutes. Add the rest of the vegetables and sliced sausage and saute for 3 minutes.
  • Fold in the bow tie pasta, Alfredo sauce, Parmesan cheese, fresh herbs and season with black pepper.
  • Reduce heat, cover and cook until heated throughout, approximately 8 - 10 minutes.
    Note: Can adjust consistency of the sauce with a small amount of low sodium chicken broth if necessary.
    Serve immediately.
