1 1/2 (12 ounce) packages al fresco Sweet Italian Chicken Sausage, fully cooked (6 links)

1/2 pound brussels sprouts, fresh

1/2 pound carrots, baby, fresh

1 red onion, chopped

1 pound fingerling potatoes

2 tablespoons extra virgin olive oil

salt & pepper

cooking spray (olive oil)

Instructions
  • Preheat oven to 425 degrees Fahrenheit. Place sheet pan in the oven to warm up.
  • Place vegetables in a large mixing bowl. Coat well with the olive oil, salt and pepper. 
  • Spray pre-heated cookie sheet with cooking spray, add vegetables and roast for 15 minutes.
  • Reduce oven heat to 350 degrees Fahrenheit.  With a spatula, toss the vegetables then add the chicken sausages. Bake for 15 minutes. Serve immediately.
