1 (12 oz) pkg al fresco® Spicy Jalapeno Chicken Sausage, sliced on the bias, 1/4" thick

1 tsp canola oil

1 cup frozen cooked sweet corn, thawed

1- 15.5oz can unseasoned black beans, rinsed and drained

1 tbsp seeded and minced jalapeno pepper

1 cup seeded and chopped red pepper

1/2 cup prepared Salsa Dressing (recipe below)

1/2 cup chopped fresh cilantro plus extra for garnish

1/4 tsp salt

1/4 tsp pepper

3 tbsp low fat plain yogurt

3 tbsp low fat sour cream

1/4 cup chunky tomato salsa

Instructions
SALSA DRESSING
  • Combine yogurt, sour cream, and tomato salsa in a small bowl. Set aside.
SOUTHWESTERN SALAD
  • In a heavy non-stick skillet, over medium heat, add canola oil.
  • Add sausage and sauté until lightly brown, stirring occasionally. Remove from heat, cut into ¼" thick slices. Set aside.
  • In a large bowl combine corn, beans, jalapeno and red pepper. Mix well. Stir in cooked sausage.
  • Stir in salsa dressing, cilantro and ¼ tsp each salt and black pepper. Gently toss to coat all surfaces.
  • Garnish with additional cilantro sprigs.
  • May be made ahead and chilled for 1 to 2 hours or served immediately.
