1 (12 ounce) package al fresco Spicy Jalapeno Chicken Sausage, fully cooked

Italian sub rolls, toasted and cut in half for 4 servings

¼ cup sweet onion, cut into thin strips

¼ cup carrot, grated

2 teaspoons sugar, white, granulated

⅛ teaspoon salt

2 tablespoon rice wine vinegar

2 medium jalapeno peppers, seeded and sliced

½ cup mayonnaise

¼ cup hoisin sauce

¼ cup fresh cilantro 

½ cup cucumber, with skin on, sliced thin

Instructions
  • Pre-heat grill to medium - high.  Grill sausages until lightly browned.
  • Prepare carrot and onion salad:  Combine the onion, carrot, sugar, salt and rice vinegar and let sit in refrigeration for an hour, up to three days. Remove any excess liquid from salad before use. 
  • Mix the mayonnaise and the hoisin sauce together, set aside.
  • To assemble, spread a generous amount of the hoisin mayo on the toasted bun, add cucumber slices, carrot onion salad, jalapenos and sausage. Top with cilantro.
  • Serve and enjoy!
