1 12oz package al fresco Spicy Jalapeno Chicken Sausage, chopped

1 tsp canola oil

1 cup finely chopped onion

8- 6" corn tostadas (may substitute with corn tortillas)

2 cups chopped fresh tomatoes, drained

1 cup shredded Mexican cheese blend

2 cups shredded romaine or iceberg lettuce

1 lime (1/2 tsp zest, 2 tbsp juice)

1 cup light sour cream

1/4 cup chopped fresh cilantro, packed

Instructions
CILANTRO CREAM SAUCE
  • In small mixing bowl blend lime zest, lime juice, sour cream and cilantro. Cover and chill.
TOSTADAS
  • Preheat oven to 350°F.
  • Over medium heat, in a heavy, medium nonstick skillet, heat oil. Add sausage and onions and sauté until sausage is hot, about 3 to 4 minutes, stirring occasionally.
  • Place tostadas on baking sheet.
  • Portion 1/3 cup sausage evenly atop tostadas
  • Layer each with 1/4 cup tomatoes and 2 tbsp cheese.
  • Bake until cheese melts, about 3-4 minutes (if substituting for tortillas, until slightly crisp and golden, 6-8 minutes). Remove from oven.
  • Sprinkle 1/4 cup lettuce and drizzle 1 tbsp of Cilantro Cream Sauce over lettuce of each tostada. Serve immediately with remaining sauce.

Tostadas were so quick easy and delicious!

Wanted to try using the jalapeño chicken sausages in a new way and found this recipe. SO easy to make. Didn't have cilantro so just topped with sour cream and still great! Added black beans to the sauté mixture and used a can of diced tomatoes with chiles for the topping before popping in the oven with cheese. Had with a side of brown rice. Delish!
