1 (12 ounce) package al fresco® Spicy Jalapeño Chicken Sausage, sliced

Cooking spray, extra virgin olive oil

1/2 red onion, sliced

8 soft yellow corn tortillas, fajita size

4 radishes, sliced thin

1/3 cup scallions, chopped

1/3 cup cilantro, chopped

1 avocado, diced

1/2 cup pico de gallo

1/2 cup queso cheese, crumbled

1/3 cup jarred Pepperoncini peppers, drained and sliced

1 lime, sliced into 8

Instructions
  • Preheat oven to 350 degrees F. Brown tortillas in oven until lightly toasted.
  • Spray medium sauté pan with cooking spray and brown sausages over medium heat until internal temp of 145 degrees.
  • Remove from heat and add sliced red onions, sautéed until soft.
  • Slice sausages to 1/4 inch slices. Top tortilla with sausages and remaining ingredients, saving the cheese for last.
  • Continue until all 8 tacos are prepared.
  • Served garnished with whole Pepperoncini peppers and lime slices.
