1 12 oz package al fresco Sundried Tomato Fully Cooked Chicken Sausage

1/4cup Sun-dried tomatoes, oil packed, drained

1/2lb Ziti, uncooked

1 Tbs Extra virgin olive oil

1/2cup Fresh Basil, chopped

1/2cup Tomatoes, chopped

1/4cup Parmesan cheese, grated

Instructions
  • Remove sun-dried tomatoes in oil from the jar and chop. Cut the sausage into 1/2" thin slices.
  • Cook the ziti per directions on the box.
  • Meanwhile, heat the olive oil in skillet and saute the al fresco sausage for 4-5 minute over medium high heat.
  • Add the sun-dried tomatoes and cook for 2 more minutes, stirring well. Remove from the skillet from the heat and stir in the basil and tomatoes.
  • Toss with the cooked, drained pasta and freshly grated cheese, and serve.
    If using dry-packed tomatoes, soak them in boiling water covered 1/2 hour before chopping

Excellent pasta!

Comments about al fresco Sundried Tomato & Basil Chicken Sausage with Ziti:

I love this sausage and the sundried tomatoes really brings out the sausage flavor. I added extra tomatoes and parmesan cheese for a little more bulk. Also sauteed onions and peppers. Great basic recipe, though.
