1 (12 ounce) package al fresco Sundried Tomato Chicken Sausage, fully cooked

1 (9 inch)  pizza crust, ready-to-heat

1/4 cup sundried tomatoes, packed in oil

1 medium Vidalia onion

1 tablespoon sugar

1 cup mozzarella cheese, shredded

2 tablespoon olive oil>

1/2 cup tomato sauce

Instructions
  • Pre-heat oven to 475° F.
  • Slice chicken sausage in 1/4" pieces.
  • Spread sauce on pizza crust and sprinkle with cheese.
  • Place sundried tomato pieces and chicken sausage slices evenly throughout pizza.
  • Slice onion and cook in olive oil over medium heat.
  • Once onion becomes limp, add sugar and saute for 5 minutes.
  • Remove onions and add to top of pizza.
  • Bake pizza for 20 minutes or until cheese is melted and crust is browned.

Caramelized Onions Make All The Difference

Caramelized onions, sausage, cheese and sundried tomatoes are a great combination. I've used other cheeses besides mozzarella (such as provolone or even gorgonzola crumbles). I don't add the sugar when I'm caramelizing the onions. It doesn't need it IMO and why add extra sugar to the dish? It's very tasty and the onions caramelize nicely without the extra sugar.
