1 (12oz) package al fresco Sweet Italian Chicken Sausage, cut into 1/4" slices

1 tablespoon olive oil

1 cup red onion, chopped

1 tablespoon garlic, minced

1/2 teaspoon dried thyme

2 cups Minute® White Rice

1/4 cup dry white wine

2 cups chicken broth, reduced sodium

1/2 cup fresh grated Parmesan Cheese

1 cup frozen petite sweet peas

Instructions
  • Heat oil in a medium skillet over medium-high heat.  Add sausage, onions and garlic and sauté until onions are translucent, 3-5 minutes.
  • Add rice and stir to coat all grains.  Add wine and sauté 1 minute.   Add chicken broth and thyme. Bring mixture to a boil, stirring frequently.  Remove from heat.  Cover and let stand 5 minutes.
  • Stir in peas and grated Parmesan cheese.  Serve topped with parsley and shaved Parmesan, if desired.

I would make this again

Excellent dish, easy to follow recipe , easy clean up. Makes a lot ! Will be cooking this again. I used parmigiano reggiano cheese, add as much cheese as you desire , blends really well with all of the flavors.

There are so many things one could do with this recipe

I added half of a chopped green bell pepper in with the sausages and onions just to kick up the flavor a little.

I would not put the Parmesan cheese into the mix as the instructions say. I think it takes away from flavor of the wine (note - Parmesan cheese is not in the ingredient list, it just shows up in the 8th line of the instructions).

This looks good and I will try it soon but the amount of Parmesan is missing from the ingredients so please correct this. I also don't cook with alcohol so will substitute chicken broth for the wine.

Don't use the Thyme, but add Saffron once I begin adding the broth. At the end, I add Grated Parmeasan cheese and a tablespoon of butter. Stir and let sit for 5 minutes.....delicious!

Easy to make. It did take a good 30 minutes or more for the rice to absorb the liquid and cook completely (but I didn't use Minute Rice).

Delicious, but errors in recipe

This is really tasty and my husband and all three kids liked it. My 7 year old daughter even cooked most of it herself. I only helped chop the onion and kept her on task.

Some problems with the recipe:
I see this has either since been fixed or maybe it just prints out wrong, but the sheet I printed said "Cook and Prep Time 10 min". I knew going in it wouldn't be that quick, but it did print out like that.
Instructions have parmesan cheese and parsley, but they are not listed in the ingredients.
1.25 c Minute Rice and 3.5 c chicken broth will take way longer than 25 minutes to cook down into a creamy risotto-like dish. I increased the rice by half a cup and decreased the chicken broth by a half a cup so it wouldn't take all night to cook minute rice!
Instructions are odd at the part when you add the broth. It says to stir in 3 cups and simmer for 15 minutes, but then it says to continue adding stock 1/4 cup at a time, even though there's only 1/2 cup left. Seems unnecessary with such a small amount of liquid left.

Other than it taking a lot longer than I planned, it was delicious and I'll be making it again!
