  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions, omitting the salt.
  • Slice the al fresco Sweet Italian Chicken Sausage into 1/2" pieces.
  • Heat olive oil in a large non stick skillet over med-high heat. Add the chicken sausage, chopped onion and red bell pepper, minced garlic, saute 2-3 minutes or until sausage is browned. Add tomato paste, balsamic vinegar, oregano, crushed red pepper and diced tomatoes and cover. Reduce heat and simmer for 15 minutes.
  • Combine pasta and tomato mixture, spoon into a 13x9 inch baking dish coated with cooking spray. Sprinkle with cheeses, and bake at 350 degrees for 25 minutes or until bubbly.

1 12 oz pkg al fresco Sweet Italian Chicken Sausage, Fully Cooked

1 lb Penne pasta

1 Tbs Extra Virgin

1 1/2 cup White onion, chopped

3/4 cup Red bell peppers, chopped

2 ea Garlic cloves, minced

1 Tbs Tomato Paste, 6oz can

1 Tbs Balsamic vinegar

1/4 tsp Dried oregano

2 1/2 lb Tomatoes, diced

1/4 tsp Red chili pepper flakes

1 cup Cheese, mozzarella & provolone, shredded

1 cup Cheese, parmesan, fresh, grated

1 svg Cooking Spray, olive oil based
