

"This one pan wonder is simple to make and so hearty, healthy and satisfying! Any leftovers, if you have them, freeze great."
Ingredients
1 package al fresco Roasted Garlic Chicken Sausage, bite size pieces
2 cups potatoes, peeled and diced
1 cup onion, chopped
1 tablespoon olive oil
1 (16 oz) can sauerkraut, rinsed and well drained
1 (15 oz) can petite chopped tomatoes
black pepper, to taste
red pepper flakes, to taste
Directions:
- 1Place potatoes and onions in a microwave safe bowl. Microwave for about 4-5 minutes until potatoes are slightly soft.
- 2Heat oil in a large, nonstick pan. Add potatoes, onions, and sausages. Sauté for 4 minutes, stirring often.
- 3Add sauerkraut and tomatoes and stir.
- 4Season with a little black pepper and a small dash of red pepper flakes and mix well.
- 5Cover and simmer until heated through and potatoes are soft, about 3 minutes.
- 6Serve and enjoy!
