Ingredients
1 package Al Fresco Rotisseries Seasoned Chicken Sausage
1 Lb Orzo
1 cup English cucumber, halved or quartered then thinly sliced
1 cup Cherry or grape tomatoes, halved
½ cup Red Onion, finely diced
½ cup roasted bell peppers, jarred, chopped into ½-inch pieces
½ cup Kalamata Olives, halved
¼ cup Feta cheese (finishing touch)
1 Tbsp chopped parsley, plus more for garnish
1 Tbsp thinly sliced basil, plus more for garnish
½ cup red wine vinaigrette dressing. Use your favorite or try this recipe (makes about 1 ½ cups): ¼ cup red wine vinegar, ¼ cup lemon juice, 4 tsp Dijon mustard, 2 tsp minced garlic, 1 tsp kosher salt, ½ tsp black pepper, ½ tsp dried oregano, 1 cup extra-virgin olive oil. Whisk together until emulsified.
Directions:
- 1Slice and sauté Al Fresco Sausage in a few teaspoons of oil until browned.
- 2 Cook orzo per package directions, then rinse with cold water.
- 3Mix ingredients together with dressing. Add more dressing based on taste. Garnish with extra feta, basil, parsley, and dried oregano.
