Ingredients
1 package of Al Fresco Rotisserie Seasoned Chicken Sausage
1 Tbsp olive oil, add more as necessary
1 shallot, minced
8oz Orzo, cooked
3 cups chicken stock
1 tsp lemon zest
Juice of 1/2 of a lemon
2 cloves garlic, minced
1/2 cup grated parmesan or pecorino
1 Tbsp butter
Salt & pepper to taste
1Tbsp chopped parsley (optional)
Directions:
- 1Start by slicing and browning the chicken sausage. Remove from heat once there is good coloring on them.
- 2In the same pan, saute the diced shallots, and the 8 oz. of orzo pasta.
- 3Let the orzo cook for a few minutes and get nice and toasty before adding in three cups of chicken stock. Toasting adds depth in flavor!
- 4Add in some minced garlic, a whole bunch of fresh spinach, lemon zest, lemon juice, and a generous amount of parmesan cheese.
- 5Add in the chicken sausage.
- 6Mix well, and top it with some more parsley, a little more lemon juice, a little extra parm.
