Ingredients
4 links of Al Fresco Apple Maple Chicken Breakfast Sausage, diced
1 large sweet potato, peeled & diced
1 tsp garlic powder
1 tsp chili powder
1/2 tsp salt
Pinch of black pepper
2 large handfuls of fresh spinach
2 eggs
Crumbled goat cheese
1 Tbsp Sriracha
1 Tbsp honey
Directions:
- 1Heat a large skillet over medium heat for a few minutes. Add a Tbsp of olive oil and continue to heat for another minute.
- 2Sauté the diced sweet potato for 3 minutes, stirring frequently.
- 3Add in the diced chicken sausage and cook until browned & caramelized, about 5-7 minutes, stirring frequently.
- 4Add in seasonings to the skillet and stir, cooking for 1 minute.
- 5To the skillet, add in the fresh spinach and stir, cooking until wilted. Remove from heat and add hash to a plate or bowl.
- 6In the same skillet, add 1 more Tbsp of olive oil (or butter) and heat for 1 minute.
- 7Crack two eggs into the pan and cook until fried to your liking.
- 8Remove eggs and add them on top of the hash, along with crumbled goat cheese.
- 9In a small bowl, whisk together 1 Tbsp Sriracha and 1 Tbsp honey. Drizzle on top of the hash and serve!
