Spinach & Feta Chicken Sausage Greek Salad with Feta Tzatziki Dressing

"This easy Spinach & Feta Chicken Sausage Greek salad recipe will be your favorite summer side dish. Loaded with vibrant and delicious fresh vegetables, it is best topped with the tangy and refreshing Feta Tzatziki dressing and can easily transform into an entrée salad with the addition of toasted pita bread."
Ingredients
1 package of al fresco Spinach & Feta Chicken Sausages, sliced
1-2 heads of Romaine Lettuce, chopped
1 Cucumber, stripe peeled and thinly sliced
1/2 Red Onion, thinly sliced
2 large Tomatoes, sliced
1 Green Bell Pepper, large diced
1/2 block of Feta Cheese, cubed
8-9 Peperoncini Peppers
Kalamata olives
Salt and Pepper, to taste
Toasted Pita Bread, optional for serving
FOR THE FETA TZATZIKI DRESSING:
2 cups of plain Greek yogurt
1/2 cup of Feta, crumbled
1 tbsp of White Vinegar
2 cloves Garlic, minced
2 sprigs of Mint
1 bunch of Dill, finely chopped
1/2 seedless Cucumber, coarsely grated
Kosher salt and Pepper, to taste
Directions:
- 1In a nonstick skillet heating over medium-high heat, place chicken sausage sliced in one layer and sear until browned on both sides and set aside.
- 2Prepare the dressing by combine all ingredients. Season with salt and pepper to taste. Allow to sit about an hour at room temperature before serving on salad. To cut the creaminess, if desired, mix with some white vinegar and extra virgin olive oil.
- 3Toss all ingredients in a large bowl with dressing or serve dressing separately
