Ingredients
1 package of al fresco Roasted Pepper & Asiago Chicken Sausage
1 tbsp olive oil or cooking spray for sweet potatoes
1 medium sweet potato – chopped
2 pasture raised eggs
Seasoning (salt and pepper to taste)
Directions:
- 1Preheat oven to 400 degrees. Toss cubed sweet potato in olive oil and add to cast iron and bake for 10 minutes
- 2Take cast iron out of oven, add chopped dinner sausage
- 3Next make two wells to crack your eggs into. Crack eggs and put back into the oven for 10 more minutes
- 4Season accordingly and serve hot
