

"This Spicy Jalapeño Chicken Sausage Fideo is a spin on my Abuelita’s (Grandmother’s) chicken fideo. This simple, yet, delicious dish is a family favorite."
Ingredients
1 package of al fresco Spicy Jalapeño Chicken Sausage
2 tbsp olive oil
2 large garlic cloves, chopped
1/2 medium onion, finely chopped
6 baby gold potatoes, quartered
2 Roma tomatoes, chopped
32 fl oz chicken broth
1/4 -1/2 tsp kosher salt
7 oz package of vermicelli
Directions:
- 1Place a 4-quart sauce pan on medium heat and add olive oil.
- 2Sauté chopped garlic cloves and onion for 2 -3 minutes.
- 3Add quartered baby gold potatoes and sauté for 5 minutes.
- 4Add diced tomatoes, 32 fl oz chicken broth and salt to sauce pan. Increase to medium-high heat.
- 5Once the chicken broth comes to a boil, add one package of al fresco Spicy Jalapeño Chicken Sausage. Cook for 6 minutes.
- 6Add 7 oz package of vermicelli and cook for 4 minutes.
- 7Serve the Spicy Jalapeño Chicken Sausage Fideo in bowls and enjoy!
