

"This is my go-to weeknight meal because it’s super easy to whip up. Gather your favorite veggies and add your favorite al fresco sausage for the easiest one pan meal you’ve ever made."
Ingredients
1 package of al fresco Spicy Jalapeno Chicken Sausage, chopped
One sweet potato, chopped
One zucchini, chopped
Small potatoes medley, about 1 cup chopped
Brocollini, one bunch
1 cup chickpeas
2 tbsp. olive oil
Salt, pepper and paprika to taste
Directions:
- 1Pre-heat oven to 450
- 2Chop all of the veggies into bite sized cubes and place in a large mixing bowl
- 3Add olive oil, salt, pepper and paprika and toss the veggies together until everything is coated evenly
- 4Bake for 20 minutes and remove. Add chopped sausage to the pan and bake for an additional 10 minutes
- 5Serve over a bed of buttered pasta or quinoa
- 6Enjoy!
