Sheet Pan Fajita Bowls with Chicken Sausage

These hearty bowls are packed with chewy brown rice, crispy al fresco chicken sausage, sweet peppers, and served with smashed avocado and Greek yogurt. Perfect for busy weeknights!"

Ingredients

1 package al fresco Roasted Pepper and Asiago Chicken Sausage, sliced

3 medium bell peppers, sliced

1 large yellow onion, sliced

2 tsp olive oil

2 tsp chili powder

2 tsp ground cumin

3/4 tsp salt

1 avocado

2 tsp lime juice

1 small clove garlic, minced

1/4 medium jalapeno, minced

1 tbsp cilantro, finely chopped

1 cup Greek yogurt

2 cups brown rice, cooked

Directions:

  • 1Preheat oven to 400ºF.
  • 2Toss peppers, onions, and olive oil, chili powder, cumin, garlic powder, and 1/2 tsp salt.
  • 3Spread veggies on sheet pan and cook for 10 minutes. Add sausage and cook for an additional 20 min.
  • 4In a small bowl, combine avocado, lime juice, cilantro, jalapeno, and remaining salt. Smash ingredients together.
  • 5Serve with rice and top with smashed avocado and Greek yogurt.
