"This is a sheet pan on the grill and very versatile to whatever veggies you happen to have on-hand. Delicious served on it’s own or over rice."
Ingredients
1 package Al Fresco Applewood Smoked Chicken Sausage, sliced
3 red, orange, and yellow bell peppers, cut into pieces
2 red onions, cut into pieces
1 small zucchini, sliced
Juice for ½ a lemon
Salt & pepper to taste
1 Tbsp olive oil
1 Tbsp fresh cilantro (for garnish)
Directions:
- 1Preheat grill and assemble skewers with peppers, onions, and chicken sausage.
- 2Whisk olive oil, salt, and pepper until emulsified, and brush over skewers.
- 3Place skewers on the grill for about 3-6 minutes over medium heat on each side until sausage is browned and veggies are softened.
- 4Transfer to platter or bowl and garnish with fresh cilantro.
