Avocado & Corn Salad with Rotisserie Chicken
"An easy, bright, and delicious salad perfect for summer BBQs (or anytime you want the taste of summer). If you make ahead, hold back the avocados until you are ready to serve. "
Ingredients
1 package Al Fresco Rotisseries Seasoned Chicken Sausage
1 Lb frozen corn
2 medium tomatoes, seeded and diced
4 scallions, sliced thin
1 bunch (about 1 ½ cups) cilantro, chopped fine
3 avocadoes, cubed
Lime dress: 1 Tbsp extra virgin olive oil, 1 tsp salt, 2 Tbsp fresh lime juice. Whisk until emulsified.
Directions:
- 1Slice and sauté Al Fresco Sausage in a few teaspoons of oil until browned.
- 2Microwave the frozen corn with a view Tbsp of water. Rinse with cold water in a strainer.
- 3Combine all salad ingredients in a large bowl, toss with dressing to taste.
