

"This sheet pan chicken sausage & gnocchi is the perfect solution for those nights when you need to make something quick. Throw it all on a pan, let it roast, and that’s it! An easy weeknight meal that everyone will love."
Ingredients
1 package Al Fresco Caramelized Onion & Cheddar Chicken Sausage, sliced
1 16 oz package uncooked potato gnocchi
1 pint grape tomatoes
1 red bell pepper, chopped
1 orange bell pepper, chopped
½ red onion, chopped
3 Tbsp olive oil
½ tsp salt
½ tsp freshly cracked black pepper
(optional) pinch crushed red pepper
¼ cup parmesan cheese, freshly grated
(optional) parsley or other fresh herbs, chopped for garnish
Directions:
- 1Preheat oven to 425°F; line a baking sheet with aluminum foil and spray with nonstick spray
- 2Spread the sausage, gnocchi, tomatoes, peppers, onions on your baking sheet; drizzle with olive oil and sprinkle with salt, pepper and crushed red pepper flakes – toss well to combine everything
- 3Bake for 20-25 minutes, tossing once during cook time; tomatoes should be bursting and peppers should be soft and caramely
- 4Serve the gnocchi immediately, sprinkle with parmesan cheese
