

"This Chicken Sausage, Potato and Kale Skillet is the best and easiest one skillet meal! Loaded with Spicy Jalapeno Chicken Sausage, crispy potatoes and lemony kale, it’s the best weeknight dinner when you want something a little healthier yet hearty!"
Ingredients
1 package al fresco Spicy Jalapeno Chicken Sausage, sliced in half
1 medium yellow onion, thinly sliced
1 large bunch of kale, roughly chopped with stems removed
2 large cloves garlic, minced
4-5 medium sized Yukon gold potatoes, sliced into bite size pieces
4 tbsp. avocado oil (divided)
1 tsp. salt (divided)
fresh lemon and sea salt to garnish
Directions:
- 1Cook potatoes and once cooked dry them off with a paper towel. Add 2 tbsp. avocado oil to a skillet and heat to medium high.
- 2Add potatoes and 1/2 tsp. to the skillet. Cook for 10 minutes on medium heat, flipping occasionally.
- 3Add onion, cover and cook for 5 minutes.
- 4Add garlic and cook for an additional minute. The potatoes should now be fork tender.
- 5Remove potatoes, onions and garlic from skillet and set aside. Add 1 tbsp. of oil and chicken sausage to skillet.
- 6Cook sausage for 3-4 minutes and once done, add to plate with potatoes.
- 7Add 1 tbsp. oil to skillet, kale and a pinch of salt to skillet. Cook for 3-4 minutes or until kale has turned bright green and slightly wilted. Add back potatoes and sausage to pan.
- 8Warm all ingredients in skillet for a few minutes before serving. Garnish with lemon and salt as desired.
