Ingredients
1 package Al Fresco Sweet italian Style Chicken Sausage, sliced
8 ounces pasta
1 Tbsp olive oil
1 cup diced onion
2 cloves garlic, minced
2 cups diced red bell pepper
1 tsp dried basil
1/2 tsp red pepper flakes (use less for less spicy)
3 packed cups spinach, chopped
Salt and pepper,to taste
2 cups marinara sauce
1 cup low-fat cottage cheese
Fresh basil and grated Parmesan Cheese (optional garnish)
Directions:
- 1Cook pasta according to package directions. Once al dente, reserve ¼ cup pasta water, then drain pasta.
- 2Prep veggies while pasta water heats up.
- 3When water is about to boil, heat a large nonstick pan over medium-low heat, add oil. When hot add onions, salt, and pepper and sauté for 3-4 minutes until softened. Then add garlic and sauté for 1 minute until fragrant. Add Al Fresco chicken sausage and sauté for 3-4 minutes. Add bell peppers, dried basil, red pepper flakes, salt, and pepper, stir to combine, and sauté for 4-5 minutes. Finally, add chopped spinach, stir to combine, and cook for 1-2 minutes until wilted.
- 4While the meat and veggies are cooking, make the pasta sauce. Add marinara sauce and cottage cheese to a blender or food processor and blend until smooth and creamy.
- 5Add cooked pasta, cottage cheese pasta sauce, and 2 Tbsp of pasta water (or more if desired) to the meat and veggies. Stir to combine. Let warm through, about 1-2 minutes.
