1 (18 oz) package of al fresco Italian Style Frozen Meatballs, approx.16 meatballs

1 tablespoon olive oil, extra virgin

1/2 cup carrots, fresh, chopped ¼“

1/2 cup celery, fresh, diced

1/2 cup onion, white, fresh, chopped

4 ounces white, Chardonnay wine

1 (40 ounce) can low fat, unsalted, chicken broth

3 ounces acini di pepe, enrich, dry pasta (½ cup)

3 ounces fresh baby spinach

Instructions
  • Heat a dutch oven or large soup pot over medium heat, coat with the olive oil. Sauté carrots, celery & onion for 3 - 4 minutes, do not brown. Meanwhile allow meatballs to defrost.
  • Add the white wine, Pour in the chicken broth and bring to a boil. Add the acini di pepe, simmer for about 7 minutes until the pasta is cooked.
  • Add the al fresco Italian Style Chicken Meatballs, and simmer for 5 minutes.
  • Stir in the baby spinach and serve immediately.
Optional - top with freshly grated parmesan or asiago cheese, and serve with crusty French bread.
