Ingredients
1 (12 ounce) package al fresco Sweet Apple Chicken Sausage, fully cooked, cut into 1/2" slices
1 tablespoon extra virgin olive oil
1/3 cup scallions, fresh, chopped
3 dried apricots, finely chopped
2 cups Minute® Premium Rice
1/2 cup chicken broth, fat free, reduced sodium
1/4 teaspoon sage, ground
1 tablespoon parsley, fresh, chopped
1 cup yogurt, plain, nonfat Greek style
1/3 cup basil, fresh, chopped
1/4 teaspoon salt
1 teaspoon black pepper, ground
1/4 cup almonds, roasted, slivered
2/3 cup grapes, red, seedless, quartered
Directions:
- 1Cook rice according to package directions. In medium sauté pan, add oil and sauté scallions for 3 - 5 minutes. Add the sausage slices and apricots, sauté for 5 minutes. Add rice, broth, simmer 1 minute, then add the sage, and parsley. Cook for another 2 - 3 minutes.
- 2Add yogurt and basil, and heat thoroughly 1 - 2 minutes.
- 3Season with salt and pepper. Fold in grapes. Place in large bowl or serving dish and top with almonds. Serve either warm or cold.
