1 (12 oz) package al fresco Sundried Tomato Chicken Sausage

2 tbsp extra virgin olive oil

2 fresh garlic cloves

1 cup sweet red bell peppers, chopped

2 cups sweet corn, frozen

15 oz baby lima beans

1/2 tsp table salt

1/2 tsp black ground pepper

1 tbsp orange juice, chilled

2 tbsp parsley, fresh, chopped

Instructions
  • Heat a medium skillet with oil over medium-high heat. Add chicken sausage, garlic and peppers, and sauté, for about 5 minutes. Remove chicken sausage, set aside, and slice ½“ pieces when cooled slightly.
  • Add corn, orange juice and lima beans to skillet, cook for 5 minutes or until vegetables are heated throughout.
  • Add chicken sausage back into the skillet. Season with the salt and pepper, then stir in parsley. Transfer to individual dinner plates or bowls and serve immediately.
