Mexican Street Corn Chicken Tacos

Mexican Street Corn Tacos featuring Al Fresco Seasoned Ground Chicken

"These Mexican style ground chicken tacos are made with homemade street corn, fresh avocado, and cotija cheese. It’s the perfect Taco Tuesday recipe!"

Ingredients

Cooking spray, as needed

1 package of al fresco Taco Night Seasoned Ground Chicken

2 cups of cooked Corn

2 tbsp Mayonnaise

1 tbsp Lime Juice

1 tbsp Paprika

1/2 cup Cilantro, chopped

1/2 cup Jalapeños, chopped

2 tbsp Cotija Cheese, for topping

4-6 Tortillas of choice

Directions:

  • 1Add cooked corn, mayonnaise, lime juice, paprika, cilantro, and jalapenos to a mixing bowl and mix together.
  • 2Next cook your package of ground chicken on medium heat for 4 - 6 minutes.
  • 3Heat up tortillas over medium heat.
  • 4Add chicken and street corn mixture together, top with avocados and sour cream and enjoy!
  • 5Season accordingly and serve hot.
