One-Pan Chicken Sausage with Peaches & Red Onions

"With just 5 ingredients, 1 pan, and 35 minutes you can create the perfect summer weeknight dinner!"

Ingredients

1 package Al Fresco Caramelized Onion & Cheddar Chicken Sausage, sliced

1 large red onion, cut into chunks

3 ripe peaches, cut into 8 slices

6 thyme sprigs

¼ cup olive oil

2 medium garlic cloves, coarsely chopped

1 tbsp. lemon juice

1 ½ tsp. kosher salt

1 tsp. black pepper

Directions:

  • 1Preheat oven to 425°F
  • 2Cut chicken sausage into large pieces
  • 3Toss together onions, peaches, thyme, olive oil, garlic, and lemon juice in a large bowl; season with salt and pepper
  • 4Scatter mixture on to your cast iron skillet and sauté for 5 minutes until onion begins to soften
  • 5Transfer your skillet to the oven and roast until peaches and onions have slightly crisp edges and juice is running, about 20 minutes
  • 6Serve immediately. Enjoy!
