One Pot Cheesy Pumpkin and Chicken Sausage Pasta

"This One Pot Cheesy Pumpkin and Sausage Pasta is only 5 ingredients, super creamy and the perfect weeknight dinner for Fall!"

Ingredients

1 package al fresco Sweet Italian Chicken Sausage

12 oz. penne pasta

1 cup half and half

1 cup pumpkin puree

1 cup water

1 cup Gouda cheese, shredded

1 tsp. salt

1/2 tsp. pepper

Optional: chopped cilantro and shredded parmesan cheese for garnish

Directions:

  • 1In a pot, over medium heat, brown chicken sausage for about 3 minutes.
  • 2Add in pasta, pumpkin puree, half and half, water, salt and pepper.
  • 3Bring up to a boil, reduce heat down to a simmer, cover and cook for 15 minutes or until the pasta is tender.
  • 4Fold in gouda cheese.
  • 5Garnish with cilantro and parmesan cheese, if desired.
