"This super simple one pot chicken and asparagus pasta is an easy and nutritious meal. Everything is cooked right in one pot for simple clean up and dinner done in under 30 minutes."
Ingredients
1 package al fresco Sweet Italian Chicken Sausage, sliced
2 tbsp ghee
3 cloves of garlic, minced
1 tsp salt
1/4 tsp black pepper
3 1/2 cups low sodium chicken or bone broth
10 ounces penne pasta
1 lb. asparagus, trimmed and cut into 1/2 strips
1/4 cup Nutritional yeast or Parmesan cheese
1 lemon, juiced
lemon zest
Optional garnish: fresh parsley
Directions:
- 1Heat ghee in a deep saute pan over medium heat. Once hot add chicken sausage, salt, pepper and stir.
- 2Cook sausage until crispy on both sides. Add garlic and saute for an additional 1-2 minutes.
- 3Add broth and stir well. Stir in pasta.
- 4Cover and bring to a boil. Reduce to a simmer for 6-7 minutes.
- 5Once pasta is cooked, open lid and stir. Add asparagus and do not stir.
- 6Simmer for 3-4 more minutes until asparagus is tender. Stir in nutritional yeast, lemon juice, lemon zest, and serve!
