Ingredients
1 package of al fresco Sweet Italian Style Chicken Sausage, sliced
1/2 sweet onion chopped
2 Tbsp Olive Oil
4 cloves garlic, minced
1 can chickpeas, drained
1/2 can Black beans
1 can diced tomatoes
1 cup broccoli
2 celery stems
1 cup cooked quinoa
Parsley to garnish as desired
salt & pepper to taste
Directions:
- 1In a Cast Iron Dutch Oven heat Olive Oil over low/medium heat.
- 2Sauté onions and garlic for 4-5 minutes.
- 3Add chicken sausage, cook for 3 minutes then add chickpeas, black beans, diced tomatoes, broccoli and celery and let it simmer for 20 minutes, stirring occasionally.
- 4Add salt and pepper to taste.
- 5Add quinoa and simmer for 5 minutes.
- 6Remove from heat and garnish with green onions.
- 7Serve warm and Enjoy!
