Sausage & Cheese Breakfast Bowl

"Tasty and filled with protein these breakfast bowls are perfect to start your day off right (also perfect for dinner to end the day!). "

Ingredients

2 packages Al Fresco Country Style Breakfast Links, sliced

2 Tbsp olive oil

1 medium red bell pepper, halved and thinly sliced

½ medium yellow onion, thinly sliced

6 large eggs

¼ tsp fresh cracked black pepper

1 large avocado, peeled, pitted and diced

½ cup salsa

½ cup shredded Monterey Jack cheese

¼ cup sour cream

2 green onions, thinly sliced

Directions:

  • 1In a large nonstick skillet, heat 1 Tbsp oil over medium heat. Add sausage, bell pepper and yellow onion; cook 10 minutes or until sausage is browned and veggies are tender, stirring occasionally. Transfer sausage mixture to medium bowl with slotted spoon, cover to keep warm.
  • 2In a medium bowl, whisk eggs and black pepper. In the same skillet, heat remaining 1 Tbsp oil over medium heat. Add egg mixture; cook 4 minutes or to desired doneness, stirring occasionally to scramble.
  • 3Divide cooked eggs and sausage, pepper and onion mixture into 4 bowls. Top bowls with avocado, salsa, cheese, sour cream and green onions.
