1 (12 ounce) package al fresco Sun Dried Tomato Sausage

8 ounce penne pasta

1 cup green beans, sliced in half (diagonally)

1 cup finger potatoes, diced

2 carrots, diced

1 tablespoon olive oil 

1 shallot, diced

1 cup light butter, unsalted

6 cloves garlic, diced

2 - 3 sprigs Rosemary, finely diced

1 cup cheddar cheese, low sodium, shredded

2 tablespoons Parmesan cheese, low sodium, grated

Instructions
  • Boil noodles according to package instructions. Add in green beans when half way cooked. Drain and set aside.
  • While noodles are cooking, remove casings from al fresco Sun Dried Tomato Chicken Sausage and dice meat. Dice potatoes and carrots and place in large skillet with olive oil. Cook until potatoes are nearly softened. Add in sausage and shallots. Saute until all items are cooked.
  • Add butter and garlic to large skillet. Stir until melted. Add pasta and green beans to the pan. Mix well. Add in rosemary and stir until blended. Finally, add in cheese.
  • For final finish, you may add grated parmesan cheese to the top of each serving.
